This knife was made by Thomas Bastide, a great design name who worked for prestigious brands such as: Christofle, Hennessy, Hermès or Baccarat.
After collaborating with our Grande Coutellerie Claude Dozorme for L'Âme table knives, it is on this new range of indispensable kitchen knives that he shows the extent of his talent.
To pay tribute to his work, each Flatcut knife is laser-marked with the signature of Thomas Bastide.
This boning knife has a thin, flexible blade that fits easily between the flesh and bones. It allows you an easy boning, without wasting meat. This cutting edge is made of X50CRMOV15 steel, it is easily reattainable.
Its particularity? When the knife is lying on a flat surface, its blade does not touch it thanks to the angled handle. Thus, it undergoes less shock and the thread is preserved! This advantage and its bakelite handle, water-resistant, make it a durable knife of very good quality.
This modern and comfortable kitchen knife was 100% made in France, in the Cutlery workshops of master craftsman Claude Dozorme, in Thiers.
Technical characteristics :
This bone knife holds its particularity in its asymmetric handle which offers an ergonomic and comfortable handle. As close to food as possible, the cut is sharp and precise.
The high quality steel X50CrMoV15 that makes up its blade offers excellent cutting strength and sharpening razor. Thanks to its precise trimming, re-sharpening is easy.
The X50CrMoV15 is composed of:
• 0,50% of carbone for a clean cut
• 0,15% of chrome for the stainless steel
• 1% of molybdenum and vanadium for flexibility
