The carving knife and fork were forged in a very high quality steel X50CrMoV15. Here is its composition:
0.50 of carbon for the blade cutting edge
0.15 of chromium making these accessories stainless
1% of molybdenum and vanadium for flexibility of the blade and easy re-sharpening
The blade offers a smooth cutting edge that does not tear the meat. The razor sharpening gives a very good cutting hold and excellent cutting edge.
